  • 1 cup broccoli florets
  • 1 red bell pepper, sliced

  • 3 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup soy sauce (low sodium recommended)
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Optional: Sesame seeds for garnish


Instructions

  1. In a small bowl, whisk together the honey, soy sauce, and rice vinegar for the sauce base. Set aside.
  2. In another small bowl, mix the cornstarch and water until smooth to create a slurry. Add this slurry to the sauce base and whisk well. Set aside.
  3. Heat the olive oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  4. Add the broccoli, bell pepper, and carrot to the same skillet. Stir fry for 3-5 minutes until vegetables are tender-crisp.
