Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish with butter or cooking spray.
- In a large bowl, whisk together the eggs, cottage cheese, milk, salt, and pepper until the mixture is smooth and slightly frothy. The cottage cheese will break down slightly, contributing to the fluffiness.
- Stir in the shredded cheddar cheese, your choice of cooked protein, and chopped vegetables into the egg mixture. Mix gently to distribute the ingredients evenly.
