Description

Make this incredibly easy Crockpot Loaded Potato Soup for a comforting meal. You need minimal prep time to get this hearty, cheesy, bacon-topped soup cooking in your slow cooker. It delivers rich flavor with very little effort.


Ingredients

  • 4 cups chicken broth
  • 2 lbs frozen diced or shredded hash browns (or peeled/diced fresh potatoes)
  • 1 (10.75 oz) can cream of chicken soup
  • 1 (10.5 oz) can cream of celery soup
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese (plus more for topping)
  • 1/2 cup chopped onion
  • 4 slices bacon, cooked and crumbled
  • Salt and black pepper to taste
  • Optional toppings: sour cream, chopped green onions


Instructions

  1. Place the chicken broth, frozen potatoes, cream of chicken soup, cream of celery soup, and onion into the slow cooker.
  2. Stir all ingredients together until they are well combined.
  3. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the potatoes are tender.
  4. About 30 minutes before serving, stir in the heavy cream and shredded cheddar cheese. Continue cooking until the cheese melts and the soup is heated through.
  5. Season the soup with salt and pepper to your liking.
  6. Ladle the soup into bowls. Top each serving generously with crumbled bacon, extra cheese, and green onions, if desired.

Notes

  • Using frozen hash browns makes this recipe exceptionally quick for prep.
  • If you prefer a thicker soup, mash some of the potatoes against the side of the slow cooker before adding the cream and cheese.
  • For a vegetarian option, substitute vegetable broth for chicken broth and omit the bacon.
  • You can use fresh potatoes, but you must dice them small (about 1/2 inch cubes) for even cooking.
