  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 packet (1 oz) taco seasoning mix
  • 1/2 cup water
  • 1 tablespoon olive oil
  • 12 small corn or flour tortillas
  • Toppings: chopped onion, fresh cilantro, lime wedges, salsa


Instructions

  1. Heat the olive oil in a large skillet or pot over medium-high heat. Add the chicken breasts and sear for 2-3 minutes per side until lightly browned.
  2. Pour in the chicken broth and water. Sprinkle the taco seasoning mix evenly over the chicken.
  3. Bring the liquid to a simmer, then reduce the heat to low, cover the skillet, and cook for 15-20 minutes, or until the chicken is cooked through (internal temperature of 165°F).
  4. Remove the chicken breasts from the skillet and place them on a cutting board. Use two forks to shred the chicken completely.
  5. Return the shredded chicken to the skillet. Stir well to coat the chicken in the remaining sauce until it is fully absorbed and the chicken is moist.
  6. Warm the tortillas according to package directions (stovetop or microwave).
