- 1 cup chicken broth
- 1 packet (1 oz) taco seasoning mix
- 1/2 cup water
- 1 tablespoon olive oil
- 12 small corn or flour tortillas
- Toppings: chopped onion, fresh cilantro, lime wedges, salsa
Instructions
- Heat the olive oil in a large skillet or pot over medium-high heat. Add the chicken breasts and sear for 2-3 minutes per side until lightly browned.
- Pour in the chicken broth and water. Sprinkle the taco seasoning mix evenly over the chicken.
- Bring the liquid to a simmer, then reduce the heat to low, cover the skillet, and cook for 15-20 minutes, or until the chicken is cooked through (internal temperature of 165°F).
- Remove the chicken breasts from the skillet and place them on a cutting board. Use two forks to shred the chicken completely.
- Return the shredded chicken to the skillet. Stir well to coat the chicken in the remaining sauce until it is fully absorbed and the chicken is moist.
- Warm the tortillas according to package directions (stovetop or microwave).
- Fill each warm tortilla with the shredded chicken filling. Top with fresh onion, cilantro, and serve immediately with lime wedges and salsa.

- For extra flavor, use half chicken broth and half salsa as your cooking liquid.
