Description

Ingredients

  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour

Instructions

  1. Beat the softened butter and sugar together in a large bowl until light and fluffy.
  2. Beat in the egg yolk and vanilla extract until combined.
  3. Gradually add the flour and salt to the butter mixture, mixing on low speed until just combined into a dough. Do not overmix.
  4. Shape the dough into a log, wrap it in plastic wrap, and chill for at least 30 minutes.
  5. Preheat your oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
  6. Remove the dough from the refrigerator. Slice the log into 1/4-inch thick rounds.
  7. Place the cookie slices onto the prepared baking sheets, spacing them about 1 inch apart.
  8. Bake for 10 to 12 minutes, or until the edges are lightly golden brown.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
