Description
A quick and easy Beef Stroganoff made in one skillet, perfect for a weeknight meal. This classic dish is ready in about 30 minutes.

- 1 tablespoon olive oil
- 1 pound beef sirloin, thinly sliced
- 1 cup sliced mushrooms
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 cups beef broth
- 1/2 cup sour cream
- 1 tablespoon Dijon mustard
- Salt and black pepper to taste
- Cooked egg noodles, for serving
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add beef and cook until browned. Remove beef from skillet and set aside.
- Add mushrooms and onion to the skillet. Cook until softened, about 5 minutes.
- Stir in garlic and cook for 1 minute more until fragrant.
- Sprinkle flour over the vegetables and stir to coat. Cook for 1 minute.
- Gradually whisk in beef broth until smooth. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Return the beef to the skillet. Stir in Dijon mustard.
- Reduce heat to low. Stir in sour cream until well combined and heated through. Do not boil.
- Season with salt and pepper to taste.
- Serve immediately over cooked egg noodles.
Notes
- For a richer flavor, use a combination of beef broth and beef consommé.
- If you don’t have sour cream, plain Greek yogurt can be substituted.
- Feel free to add a splash of Worcestershire sauce for extra depth.
