- 2 pounds russet potatoes, peeled and quartered
- 8 tablespoons unsalted butter, softened
- 2 large egg yolks
- 1/4 cup heavy cream

Instructions
- Preheat your oven to 400°F (200°C).
- Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
- Drain the potatoes well and return them to the hot pot for a minute to dry them out.
- Mash the potatoes until smooth.
- Add the softened butter, egg yolks, and heavy cream to the mashed potatoes.
- Season with salt and white pepper. Mix until well combined and smooth.
- Transfer the potato mixture to a piping bag fitted with a star tip.
- Pipe the potatoes onto a baking sheet lined with parchment paper, creating decorative swirls or mounds.
- Bake for 20-25 minutes, or until the tops are golden brown and lightly crisp.
- Serve immediately.
Notes
- For extra richness, you can add a tablespoon of grated Parmesan cheese to the potato mixture.
- If you don’t have a piping bag, you can spoon the potato mixture onto the baking sheet and shape it with a fork.
