Description

Make this simple, cheesy Dorito Casserole for a satisfying, family-friendly dinner. It uses ground beef and crushed chips for a great texture.

Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (10 ounce) can Ro-Tel diced tomatoes and green chilies, undrained
  • 1 cup sour cream
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1 cup water
  • 4 cups crushed Nacho Cheese Doritos (about half a large bag)
  • 2 cups shredded cheddar cheese, divided

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground beef and onion in a large skillet over medium heat. Drain off any excess grease.
  3. Stir in the cream of chicken soup, Ro-Tel, sour cream, chili powder, cumin, garlic powder, and water into the skillet with the meat mixture. Cook until heated through, stirring constantly.
  4. Remove the skillet from the heat. Gently fold in 3 cups of the crushed Doritos and 1 cup of the shredded cheddar cheese into the meat mixture.
  5. Spread the mixture evenly into the prepared baking dish.
  6. Top the casserole evenly with the remaining 1 cup of crushed Doritos and the remaining 1 cup of shredded cheddar cheese.
  7. Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the topping is lightly browned.
  8. Let the casserole rest for 5 minutes before serving.

Notes

  • For a different flavor, substitute cream of mushroom soup for the cream of chicken soup.
  • You can use any flavor of Doritos you prefer, such as Cool Ranch, for a variation on this cheesy baked dinner recipe.
  • If you want extra moisture, add 1/2 cup of milk when mixing the wet ingredients.
