Description
A simple, cheesy, and crunchy baked casserole using ground beef and Nacho Cheese Doritos for a quick weeknight dinner.

- 1 pound ground beef
- 1 medium onion, chopped
- 1 (10.75 ounce) can condensed cream of chicken soup
- 1 (10 ounce) can condensed cream of mushroom soup
- 1 cup milk
- 1 teaspoon taco seasoning
- 2 cups shredded cheddar cheese, divided
- 1 (4 ounce) can diced green chiles, drained
- 1 bag (9.25 ounces) Nacho Cheese Doritos, crushed slightly
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
- Cook the ground beef and onion in a large skillet over medium heat until the beef is browned. Drain off any excess grease.
- In a large bowl, mix the cooked beef mixture, cream of chicken soup, cream of mushroom soup, milk, taco seasoning, green chiles, and 1.5 cups of the shredded cheddar cheese. Stir until combined.
- Spread half of the crushed Doritos evenly over the bottom of the prepared baking dish.
- Pour the meat and soup mixture over the chip layer and spread it out evenly.
- Sprinkle the remaining 0.5 cup of shredded cheese over the top of the mixture.
- Top with the remaining crushed Doritos.
- Bake for 25 to 30 minutes, or until the casserole is bubbly and the topping is lightly browned.
- Let the casserole rest for 5 minutes before serving.
Notes
- You can substitute Cool Ranch Doritos for Nacho Cheese Doritos for a different flavor profile.
- For a make-ahead option, assemble the casserole completely, cover it, and refrigerate for up to 24 hours. Add 10 to 15 minutes to the baking time if baking directly from the refrigerator.
- Serve with sour cream, salsa, or chopped lettuce if desired.
