Description
A fresh, light salad featuring chopped cucumber, onion, and tomato dressed with a simple vinegar mixture. This recipe is quick to prepare and serves well as a side dish.
Ingredients
Scale
- 2 medium cucumbers, peeled and chopped
- 3 medium ripe tomatoes, chopped
- 1 small red onion, thinly sliced
- 1/4 cup white vinegar
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
Instructions
- Wash and chop the cucumbers, tomatoes, and thinly slice the red onion. Place all chopped vegetables into a large mixing bowl.
- In a small bowl, whisk together the white vinegar, olive oil, salt, pepper, and dried oregano to create the dressing.
- Pour the dressing over the vegetables in the large bowl.
- Gently toss the salad until all the vegetables are evenly coated with the dressing.
- For best flavor, cover the bowl and refrigerate for at least 15 minutes before serving to allow the vegetables to marinate slightly.
Notes
- For a crunchier onion flavor, soak the sliced onion in cold water for 10 minutes before draining and adding to the salad.
- You can substitute red wine vinegar for white vinegar for a slightly different tang.
- This salad tastes best when served the same day it is made.
