Ingredients

  • 1/2 cup fresh cucumber, thinly sliced

  • 2 tablespoons fresh lime juice
  • 1 tablespoon simple syrup (or to taste)
  • 2 cups chilled sparkling water
  • Ice cubes
  • Cucumber slices and mint sprigs for garnish


Instructions

  1. Combine the cold water, sliced cucumber, and sliced ginger in a small bowl or jar.
  2. Muddle the cucumber and ginger lightly to release their flavors. Do not over-muddle.
  3. Let the mixture infuse for at least 30 minutes in the refrigerator. For stronger flavor, infuse for up to 2 hours.
  4. Strain the infused water mixture into a glass, discarding the solids.
  5. Stir in the fresh lime juice and simple syrup until dissolved.
  6. Fill serving glasses with ice cubes.
  7. Pour the cucumber-ginger base mixture into the glasses, filling them about one-third full.
  8. Top each glass with chilled sparkling water.
  9. Garnish with fresh cucumber slices and mint sprigs before serving immediately.
