  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

  • 1 tablespoon olive oil
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 tablespoon minced garlic
  • 1/2 cup chicken broth (for thickening)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. Sprinkle the chicken evenly with salt, pepper, Italian seasoning, and garlic powder. Drizzle with olive oil.
  3. Pour the first 1/2 cup of chicken broth over the chicken. Add the chopped sun-dried tomatoes and minced garlic around the chicken.
  4. Cover the crockpot and cook on LOW for 4 to 6 hours or on HIGH for 2 to 3 hours, until the chicken is cooked through and tender.
  5. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker.
  6. In a small bowl, whisk together the remaining 1/2 cup of chicken broth and the heavy cream. Pour this mixture into the slow cooker.
  7. Stir in the grated Parmesan cheese until the sauce is smooth and creamy.
  8. Cook on LOW for another 15 to 20 minutes, or until the sauce has thickened slightly. Stir well before serving.
