Description

Make a moist, flavorful meatloaf with minimal effort using your slow cooker. This recipe uses French onion soup mix for deep savory flavor and tops it with melted Swiss cheese.


Ingredients

  • 2 lbs ground beef (80/20 recommended)
  • 1 cup dry bread crumbs
  • 1 large egg, lightly beaten
  • 1/2 cup milk
  • 1 packet (10.5 oz) dry onion soup mix
  • 1/4 cup finely chopped onion
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 4 slices Swiss cheese


Instructions

  1. In a large bowl, combine the ground beef, bread crumbs, egg, milk, dry onion soup mix, chopped onion, Worcestershire sauce, thyme, and pepper. Mix gently with your hands until just combined; do not overmix.
  2. Shape the mixture into a loaf shape and place it in the basin of a 5-quart or larger slow cooker.
  3. Cook on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours, until the internal temperature reaches 160 degrees Fahrenheit.
  4. About 15 minutes before the cooking time ends, arrange the Swiss cheese slices evenly over the top of the meatloaf.
  5. Cover and cook until the cheese is fully melted and bubbly.
  6. Remove the meatloaf carefully from the slow cooker using two spatulas. Let it rest for 10 minutes before slicing and serving.

Notes

  • For a cleaner presentation, line your slow cooker with a slow cooker liner before adding the meatloaf mixture.
  • If you prefer a thicker glaze, mix 1/4 cup ketchup with 1 tablespoon brown sugar and spread it over the loaf during the last hour of cooking, before adding the cheese.
  • Use 85/15 ground beef if you want slightly less fat, but 80/20 provides better moisture retention in the slow cooker.
