Ingredients
Scale
- 2 pounds small potatoes (such as baby Yukon Gold or red potatoes)
- 1/4 cup olive oil
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried Italian herbs
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt (or to taste)
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and dry the potatoes. Cut them into 1-inch pieces. For smaller potatoes, simply halve or quarter them.
- In a large bowl, combine the olive oil, grated Parmesan cheese, garlic powder, onion powder, Italian herbs, black pepper, and salt.
- Add the cut potatoes to the bowl and toss them until they are evenly coated with the Parmesan mixture.
- Spread the coated potatoes in a single layer on a large baking sheet. Make sure not to overcrowd the pan; use two sheets if necessary for maximum crispiness.
- Bake for 30-40 minutes, flipping halfway through, until the potatoes are golden brown and crispy.
- Remove from the oven and garnish with fresh chopped parsley, if using.
- Serve immediately and enjoy your crispy Parmesan crusted potatoes!
Notes
- For extra crispiness, ensure potatoes are dry before tossing with the mixture.
- Adjust seasonings to your preference.
- You can use different herbs like rosemary or thyme.
