- Preheat your air fryer to 380°F (195°C).
- Dry the rinsed chickpeas completely using paper towels. Remove any loose skins. This step is key for crispiness.

- Place the seasoned chickpeas in the air fryer basket in a single layer. Do not overcrowd the basket.
- Air fry for 12 to 15 minutes, shaking the basket vigorously halfway through, until the chickpeas are golden brown and crunchy.
- While the chickpeas cook, whisk together the dressing ingredients: 2 tablespoons olive oil, lemon juice, and Dijon mustard.
- In a large bowl, combine the mixed greens, cucumber, and cherry tomatoes.
- Add the warm, crispy chickpeas to the salad mixture.
- Drizzle the dressing over the salad and toss gently to combine.
- Top with crumbled feta cheese, if using, and serve immediately for maximum crunch.

- For the best texture, ensure the chickpeas are completely dry before oiling and seasoning them.
