Description

Make crunchy chickpeas in your air fryer and toss them into a fresh salad for a satisfying, high-protein vegetarian lunch.

Ingredients

Scale
  • 1 (15-ounce) can chickpeas, rinsed and thoroughly dried
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 4 cups mixed greens
  • 1/2 cup chopped cucumber
  • 1/2 cup halved cherry tomatoes
  • 1/4 cup crumbled feta cheese (optional)
  • For Dressing: 2 tablespoons olive oil, 1 tablespoon lemon juice, 1 teaspoon Dijon mustard

Instructions

  1. Preheat your air fryer to 380°F (195°C).
  2. Dry the rinsed chickpeas completely using paper towels. Remove any loose skins. This step is key for crispiness.
  3. In a bowl, toss the dried chickpeas with 1 tablespoon of olive oil, salt, pepper, and garlic powder until coated.
  4. Place the seasoned chickpeas in the air fryer basket in a single layer. Do not overcrowd the basket.
  5. Air fry for 12 to 15 minutes, shaking the basket vigorously halfway through, until the chickpeas are golden brown and crunchy.
  6. While the chickpeas cook, whisk together the dressing ingredients: 2 tablespoons olive oil, lemon juice, and Dijon mustard.
  7. In a large bowl, combine the mixed greens, cucumber, and cherry tomatoes.
  8. Add the warm, crispy chickpeas to the salad mixture.
  9. Drizzle the dressing over the salad and toss gently to combine.
  10. Top with crumbled feta cheese, if using, and serve immediately for maximum crunch.

Notes

  • For the best texture, ensure the chickpeas are completely dry before oiling and seasoning them.
  • If you prefer a spicier flavor, add 1/4 teaspoon of smoked paprika to the chickpea seasoning mix.
  • Do not add the dressing to the salad until you are ready to serve to prevent the chickpeas from softening quickly.
