Instructions
- Wash and trim the garlic scapes to fit into your jars, leaving about half an inch of space at the top.
- Pack the scapes tightly into clean, sterilized jars.
- In a medium saucepan, combine the vinegar, water, sugar, salt, mustard seeds, and red pepper flakes (if using).
- Bring the mixture to a boil, stirring until the sugar and salt are dissolved.
- Carefully pour the hot brine over the garlic scapes in the jars, making sure they are fully submerged.
- Tap the jars gently to remove any air bubbles.
- Seal the jars with lids.
- Let the jars cool to room temperature.
- Refrigerate the pickled garlic scapes for at least 24 hours before serving to allow the flavors to meld.
