- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes and their juice, undrained
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces lasagna noodles, broken into small pieces
- 1 (15 ounce) container ricotta cheese
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil, for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until lightly browned.
- Add onion and cook until softened, about 5 minutes. Stir in garlic and cook for 1 minute more until fragrant.
- Pour in chicken broth and diced tomatoes with juice. Stir in Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
- Add the broken lasagna noodles to the pot. Cook according to package directions, stirring occasionally, until the noodles are tender.
- Reduce the heat to low. Stir in the ricotta cheese until it melts into the broth, creating a creamy base.
- Whisk in the heavy cream until fully combined.
- Stir in the mozzarella cheese and Parmesan cheese until melted and smooth. Do not let the soup boil after adding dairy.
- Taste and adjust seasoning if needed. Serve hot, garnished with fresh basil.

- You can use leftover cooked chicken to speed up this recipe.
- For extra richness, stir in an egg yolk with the heavy cream.
