- 1 tablespoon olive oil
- 1 pound large shrimp, peeled and deveined
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, packed in oil, drained and chopped
- 1 1/4 cups heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- Red pepper flakes, to taste (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add shrimp, salt, and pepper. Cook for 1-2 minutes per side, until pink and opaque. Remove shrimp from skillet and set aside.
- Add minced garlic and chopped sun-dried tomatoes to the skillet. Cook for about 1 minute until fragrant.
- Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and the sauce thickens slightly.
- Add the spinach and cook until wilted, about 1-2 minutes.
- Return the cooked shrimp to the skillet. Stir to coat the shrimp in the sauce.
- Serve immediately, garnished with red pepper flakes if desired.
Notes
- For a touch of acidity, you can add a squeeze of lemon juice at the end.
