Description

Ingredients

  • 1 tablespoon olive oil
  • 1 pound large shrimp, peeled and deveined
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, packed in oil, drained and chopped
  • 1 1/4 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Red pepper flakes, to taste (optional)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add shrimp, salt, and pepper. Cook for 1-2 minutes per side, until pink and opaque. Remove shrimp from skillet and set aside.
  3. Add minced garlic and chopped sun-dried tomatoes to the skillet. Cook for about 1 minute until fragrant.
  4. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and the sauce thickens slightly.
  5. Add the spinach and cook until wilted, about 1-2 minutes.
  6. Return the cooked shrimp to the skillet. Stir to coat the shrimp in the sauce.
  7. Serve immediately, garnished with red pepper flakes if desired.

Notes

  • For a touch of acidity, you can add a squeeze of lemon juice at the end.
