- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon Italian seasoning
- Salt and freshly ground black pepper to taste
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, drained and chopped
- 1 1/2 cups heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add chicken pieces, Italian seasoning, salt, and pepper. Cook until chicken is browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add minced garlic and chopped sun-dried tomatoes to the same skillet. Cook for 1 minute until fragrant.
- Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and the sauce is smooth.
- Return the cooked chicken to the skillet. Add fresh spinach and stir until the spinach wilts, about 2-3 minutes.
- Serve hot.
Notes
- For a touch of acidity, you can add a splash of white wine after cooking the garlic and sun-dried tomatoes, letting it reduce before adding the cream.
