  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper to taste
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken pieces, Italian seasoning, salt, and pepper. Cook until chicken is browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  2. Add minced garlic and chopped sun-dried tomatoes to the same skillet. Cook for 1 minute until fragrant.
  3. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and the sauce is smooth.
  4. Return the cooked chicken to the skillet. Add fresh spinach and stir until the spinach wilts, about 2-3 minutes.
  5. Serve hot.

Notes

  • For a touch of acidity, you can add a splash of white wine after cooking the garlic and sun-dried tomatoes, letting it reduce before adding the cream.
