  • 2 pounds yellow squash, thinly sliced
  • 6 slices bacon, chopped
  • 1 large onion, thinly sliced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup breadcrumbs (optional, for topping)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the chopped bacon in a large skillet over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the skillet.
  3. Add the sliced onion to the skillet with the bacon fat. Cook over medium-low heat, stirring occasionally, until the onions are soft and caramelized, about 10-15 minutes.
  4. In a large bowl, combine the sliced squash, cooked bacon, caramelized onions, heavy cream, Parmesan cheese, salt, and pepper. Mix well to combine.
  5. Pour the mixture into a 9×13 inch baking dish. If desired, sprinkle the breadcrumbs evenly over the top for a crispy crust.
