Ingredients

  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 pound fresh Spinach
  • 4 cups Vegetable or Chicken Broth
  • 1/2 cup Heavy Cream (or full-fat Coconut Milk for dairy-free)
  • 1/4 teaspoon Nutmeg
  • Salt to taste
  • Black Pepper to taste


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until soft, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Add the fresh spinach to the pot in batches, stirring until it wilts down completely.
  5. Pour in the broth. Bring the mixture to a simmer.
  6. Remove the pot from the heat. Carefully transfer the soup mixture to a blender (or use an immersion blender). Blend until completely smooth.
  7. Return the pureed soup to the pot. Stir in the heavy cream and nutmeg.
  8. Heat gently until warmed through. Do not boil after adding cream.
  9. Season with salt and pepper to your liking. Serve hot.

  • For a thicker soup, you can add one small, cooked potato along with the broth before blending.
