Description

Make this hearty, creamy soup with Italian sausage and cheese tortellini in one pot for a fast weeknight meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (8 ounce) package cream cheese, cubed
  • 1/2 cup heavy cream
  • 1 (19 ounce) package refrigerated cheese tortellini
  • 3 cups fresh spinach


Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Drain excess grease.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Pour in the chicken broth and add the diced tomatoes (with juice), Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
  5. Reduce the heat to low. Add the cubed cream cheese, stirring constantly until it melts completely into the broth.
  6. Stir in the heavy cream until the soup is smooth and creamy.
  7. Increase the heat to medium-low and add the refrigerated tortellini. Cook according to package directions, usually 5 to 7 minutes, until the pasta is tender.
  8. Stir in the fresh spinach until it wilts into the soup.
  9. Serve immediately.

Notes

  • You can substitute mild Italian sausage for spicy if you prefer less heat.
  • For a thicker soup, use half-and-half instead of heavy cream, or add 1 tablespoon of cornstarch mixed with 2 tablespoons of cold water during the last 5 minutes of cooking.
  • If you do not have fresh spinach, you can use frozen spinach, thawed and squeezed dry, added with the cream cheese.
