  • 3 lbs Yukon Gold potatoes, peeled and cubed
  • 6 large eggs, hard-boiled and chopped
  • 1 cup mayonnaise
  • 1/4 cup yellow mustard
  • 1/4 cup sweet pickle relish
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped red onion
  • 2 tablespoons white vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh dill, chopped (optional)


Instructions

  1. Place the cubed potatoes in a large pot and cover with cold, salted water. Bring to a boil and cook until potatoes are fork-tender, about 15-20 minutes. Drain well and let cool slightly.
  2. While potatoes cook, prepare the dressing base. In a large bowl, whisk together the mayonnaise, mustard, sweet pickle relish, vinegar, salt, and pepper until smooth.
  3. Gently fold the warm, slightly cooled potatoes into the dressing mixture. Mix carefully to coat without mashing the potatoes too much.
  4. Add the chopped celery, red onion, and chopped hard-boiled eggs to the potato mixture. Fold gently until everything is evenly distributed.
  5. Stir in the fresh dill, if using.
  6. Cover the bowl and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld.
