Ingredients

  • 2 tablespoons olive oil
  • 2 large leeks, white and light green parts only, sliced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1.5 pounds potatoes, peeled and cubed
  • 1 cup milk or heavy cream
  • Salt and black pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat. Add leeks and cook until softened, about 5-7 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Pour in broth and add potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  4. Carefully transfer soup to a blender or use an immersion blender to puree until smooth.
  5. Return soup to the pot. Stir in milk or cream. Heat gently, but do not boil.
  6. Season with salt and pepper to taste. Serve hot.

Notes

  • For a richer soup, use heavy cream.
