- 2 tablespoons unsalted butter or olive oil
- 3 large leeks, white and light green parts only, thoroughly cleaned and sliced
- 2 medium yellow onions, chopped
- 4 cups chicken or vegetable broth
- 2 pounds Russet potatoes, peeled and cubed
- 1 cup heavy cream (or full-fat coconut milk for dairy-free)
- Salt and freshly ground black pepper to taste
- Optional: 4 slices bacon, cooked and crumbled, for garnish
Instructions
- Melt the butter or heat the oil in a large pot or Dutch oven over medium heat.
- Add the sliced leeks and chopped onions. Sauté gently until softened and translucent, about 8 to 10 minutes. Do not let them brown.
- Pour in the broth and add the cubed potatoes. Bring the mixture to a boil.
- Reduce the heat, cover, and simmer until the potatoes are very tender, about 15 to 20 minutes.
- Remove the pot from the heat. Using an immersion blender, blend the soup until completely smooth and velvety. Alternatively, carefully transfer the soup in batches to a standard blender and blend until smooth, then return to the pot.
- Stir in the heavy cream. Heat the soup gently over low heat until warmed through. Do not boil after adding the cream.
- Season generously with salt and pepper to your taste.
- Ladle the soup into bowls. Garnish with crumbled bacon, if using.
Notes
- Thoroughly wash the leeks; dirt often hides between the layers.
- For an extra rich flavor, use homemade broth.
- If the soup is too thick, add a little more broth or water until you reach your desired consistency.
- Taste and adjust seasoning at the very end, as the broth flavor concentrates during simmering.
