Description

A simple recipe for baking bone-in chicken thighs until the skin is crisp and the meat is juicy, coated in a rich garlic Parmesan cream sauce.

  • 6 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 2 tablespoons fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Pat the chicken thighs very dry with paper towels.
  2. Rub the chicken thighs all over with olive oil. Season the skin side generously with salt, pepper, and paprika.
  3. Place the seasoned chicken thighs skin-side up in a large oven-safe skillet or baking dish.
  4. Bake for 25 minutes until the skin starts to crisp.
  5. While the chicken bakes, prepare the sauce: In a small saucepan over medium heat, combine the minced garlic, heavy cream, and chicken broth. Bring to a gentle simmer.
  6. Reduce the heat to low and stir in the Parmesan cheese and Italian seasoning until the cheese melts and the sauce thickens slightly, about 3 minutes. Do not boil.
  7. Remove the chicken from the oven. Pour the cream sauce around the chicken thighs in the baking dish, avoiding pouring directly over the skin.
  8. Return the dish to the oven and bake for another 10 to 15 minutes, or until the internal temperature of the chicken reaches 165 degrees Fahrenheit (74 degrees Celsius) and the sauce is bubbly.
  9. Remove from the oven and let the chicken rest for 5 minutes before serving. Garnish with fresh parsley.
