  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt (plus more for pasta water)
  • 1/2 cup dry white wine or chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)


Instructions

  1. Cook pasta according to package directions until al dente. Reserve about 1 cup of the starchy pasta water before draining.
  2. While pasta cooks, heat olive oil and butter in a large skillet over medium-high heat.
  3. Add sliced mushrooms to the skillet. Cook until they release their liquid and start to brown, about 5-7 minutes.
  4. Stir in the minced garlic, thyme, salt, and pepper. Cook for 1 minute until fragrant.
  5. Pour in the white wine or broth, scraping up any browned bits from the bottom of the pan. Let it simmer and reduce slightly for 2 minutes.
  6. Reduce heat to medium-low. Pour in the heavy cream and bring to a gentle simmer.
  7. Stir in the grated Parmesan cheese until the sauce is smooth.
  8. Add the drained pasta directly to the skillet with the sauce. Toss to coat.
  9. If the sauce is too thick, add the reserved pasta water, a few tablespoons at a time, until the sauce clings nicely to the pasta.
  10. Serve immediately, garnished with fresh parsley.
