  • 1 pound boneless, skinless chicken breasts, cooked and shredded
  • 4 slices bacon, cooked and crumbled
  • 1 (16 ounce) package potato gnocchi
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ranch seasoning mix
  • 1/2 teaspoon dried Italian herbs
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 4 ounces cream cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)


Instructions

  1. Heat the olive oil in a large skillet or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic, ranch seasoning, Italian herbs, salt, and pepper to the skillet. Cook for 1 minute until fragrant.
  3. Pour in the chicken broth and bring the mixture to a simmer.
  4. Add the cubed cream cheese and stir until it melts completely into the broth, creating a smooth base.
  5. Stir in the heavy cream.
  6. Add the cooked, shredded chicken and the uncooked gnocchi to the skillet. Stir well to coat everything.
  7. Bring the mixture back to a gentle simmer. Cook uncovered for 8 to 10 minutes, stirring occasionally, until the gnocchi are tender and have absorbed some liquid.
  8. Stir in the mozzarella cheese and Parmesan cheese until melted and creamy.
  9. Remove the skillet from the heat. Stir in the crumbled bacon.
  10. Serve immediately, garnished with fresh parsley.

Notes

  • You can cook the chicken breasts by boiling or baking them before shredding.
  • For a thicker sauce, reduce the amount of chicken broth slightly.
  • If you do not have ranch seasoning mix, combine 1/2 teaspoon dried dill, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, and 1/4 teaspoon dried parsley.
