- 1 pound boneless, skinless chicken breasts, cooked and shredded
- 4 slices bacon, cooked and crumbled
- 1 (16 ounce) package potato gnocchi
- 1 small yellow onion, chopped

- 1 teaspoon ranch seasoning mix
- 1/2 teaspoon dried Italian herbs
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1 cup chicken broth
- 1/2 cup heavy cream
- 4 ounces cream cheese, cubed
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded Parmesan cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large skillet or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, ranch seasoning, Italian herbs, salt, and pepper to the skillet. Cook for 1 minute until fragrant.
- Pour in the chicken broth and bring the mixture to a simmer.
- Add the cubed cream cheese and stir until it melts completely into the broth, creating a smooth base.
- Stir in the heavy cream.
- Add the cooked, shredded chicken and the uncooked gnocchi to the skillet. Stir well to coat everything.
- Bring the mixture back to a gentle simmer. Cook uncovered for 8 to 10 minutes, stirring occasionally, until the gnocchi are tender and have absorbed some liquid.
- Stir in the mozzarella cheese and Parmesan cheese until melted and creamy.
- Remove the skillet from the heat. Stir in the crumbled bacon.
- Serve immediately, garnished with fresh parsley.
Notes
- You can cook the chicken breasts by boiling or baking them before shredding.
- For a thicker sauce, reduce the amount of chicken broth slightly.
- If you do not have ranch seasoning mix, combine 1/2 teaspoon dried dill, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, and 1/4 teaspoon dried parsley.
