- 4 cups chicken broth or vegetable broth
- 2 cups milk
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1 1/2 cups shredded sharp cheddar cheese
- 1/4 cup heavy cream (optional, for extra richness)
Instructions
- Melt the butter in a large pot or Dutch oven over medium heat.
- Add the chopped onion and cook until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Add the broccoli florets and chicken broth to the pot. Bring to a boil, then reduce heat, cover, and simmer for 10-15 minutes, or until the broccoli is tender.
- Carefully transfer the soup to a blender or use an immersion blender to puree the soup until smooth. If using a regular blender, you may need to do this in batches.
- Return the pureed soup to the pot. Stir in the milk, salt, and pepper. Heat gently over medium-low heat, but do not boil.
- Gradually stir in the shredded cheddar cheese until it is melted and the soup is smooth.
- If using, stir in the heavy cream for added richness.
