  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper to taste
  • 2 (15 ounce) cans Alfredo sauce
  • 1 cup cooked shredded chicken or beef (optional)
  • Fresh parsley, chopped, for garnish


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook lasagna noodles according to package directions until al dente. Drain and rinse with cold water.
  3. In a medium bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, egg, Italian seasoning, salt, and pepper. Mix well. If using, stir in the shredded chicken or beef.
  4. Spread about 1/4 cup of Alfredo sauce in the bottom of a 9×13 inch baking dish.
  5. Lay a cooked lasagna noodle flat. Spread about 2-3 tablespoons of the cheese mixture evenly over the noodle.
  6. Carefully roll up the noodle, starting from one end. Place the roll-up seam-side down in the baking dish. Repeat with the remaining noodles and cheese mixture.
  7. Pour the remaining Alfredo sauce over the roll-ups.
  8. Cover the baking dish with foil.
  9. Bake for 20 minutes. Remove the foil and bake for another 10-15 minutes, or until the sauce is bubbly and the cheese is melted.
  10. Garnish with fresh parsley before serving.
