Description

This recipe delivers a savory, comforting Cowboy Cornbread Casserole quickly, making it perfect for busy weeknights or feeding a large family.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (10 ounce) can diced tomatoes and green chilies (Rotel), undrained
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (8.5 ounce) package cornbread mix (like Jiffy)
  • Ingredients listed on cornbread mix package (usually milk and egg)
  • 1 cup shredded cheddar cheese


Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground beef and chopped onion in a large skillet over medium heat until the beef is fully cooked. Drain off any excess grease.
  3. Stir the rinsed black beans, drained corn, undrained diced tomatoes and green chilies, chili powder, cumin, salt, and pepper into the skillet with the beef mixture. Heat through for about 5 minutes.
  4. Pour the beef mixture evenly into the prepared baking dish.
  5. Prepare the cornbread batter according to the package directions, using the required milk and egg.
  6. Pour the cornbread batter directly over the meat mixture in the baking dish. Do not stir.
  7. Bake for 25 minutes.
  8. Remove the casserole from the oven and sprinkle the shredded cheddar cheese evenly over the top of the cornbread layer.
  9. Return the casserole to the oven and bake for another 5 to 7 minutes, or until the cheese is melted and bubbly and the cornbread is golden brown.
  10. Let the casserole rest for 5 minutes before cutting and serving.

Notes

  • You can substitute pinto beans for black beans if you prefer.
  • For extra flavor, add 1/2 cup of your favorite salsa to the meat mixture.
  • If you want a spicier dish, use the hot variety of diced tomatoes and green chilies.
