Description
Make a creamy, spicy Buffalo Chicken Dip using cottage cheese for a high-protein, lighter alternative to the classic recipe. This dip is simple to prepare for parties or snacks.
Ingredients
Scale
- 1 cup cooked, shredded chicken
- 1 cup low-fat cottage cheese
- 1/2 cup buffalo wing sauce
- 1/4 cup Greek yogurt or light cream cheese
- 1/4 cup shredded cheddar cheese (optional, for topping)
- 1 teaspoon ranch seasoning mix
Instructions
- Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a small baking dish.
- In a food processor, combine the cottage cheese and ranch seasoning. Process until the mixture is completely smooth and creamy. This step is key for texture.
- Transfer the smooth cottage cheese mixture to a medium bowl. Add the shredded chicken and buffalo sauce. Mix well until everything is evenly coated.
- Spread the chicken mixture into the prepared baking dish.
- If using, sprinkle the shredded cheddar cheese evenly over the top.
- Bake for 15 to 20 minutes, or until the dip is heated through and the cheese on top is melted and bubbly.
- Serve warm with celery sticks, carrot sticks, or tortilla chips.
Notes
- For an extra smooth texture, ensure you blend the cottage cheese until no curds remain.
- You can use canned chicken for faster preparation. Drain it well before adding.
- If you prefer a thicker dip, reduce the amount of buffalo sauce slightly.
