Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3 minutes.
  3. Beat in the egg, vanilla extract, and almond extract until just combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft dough forms. Do not overmix.
  6. Scoop the dough using a large ice cream scoop (about 1/3 cup per cookie) and place onto the prepared baking sheets, leaving 3 inches between each mound.
  7. Bake for 10 to 12 minutes. The edges should be set, but the center should still look slightly soft and underbaked.
  8. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  9. Prepare the frosting: In a small bowl, whisk together the powdered sugar, milk, vanilla extract, and almond extract until smooth.
  10. Add pink gel food coloring one drop at a time until you reach the desired bright pink color. The frosting should be thick but spreadable.
  11. Once the cookies are completely cool, spread a generous layer of pink frosting over the top of each cookie.
