- 1 cup cooked brown rice
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (15 ounces) pinto beans, rinsed and drained
- 1 pound boneless, skinless chicken breasts, cooked and shredded
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup salsa
- 1/4 cup chopped cilantro
- 1/4 cup shredded Monterey Jack cheese
- 1/4 cup sour cream
- 1/4 cup guacamole
- 1/4 cup pico de gallo
Instructions
- Prepare your rice according to package directions.
- In a medium bowl, combine the shredded chicken with olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Toss to coat evenly.
- Warm the seasoned chicken in a skillet over medium heat for 3-5 minutes, or until heated through.
- Add the rinsed and drained black beans and pinto beans to the skillet with the chicken. Stir and cook for another 2-3 minutes until the beans are warm.
- Assemble your burrito bowls: Start with a base of cooked rice.
- Top with the chicken and bean mixture.
