  • 1 can (15 ounces) pinto beans, rinsed and drained
  • 1 pound boneless, skinless chicken breasts, cooked and shredded
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup salsa
  • 1/4 cup chopped cilantro
  • 1/4 cup shredded Monterey Jack cheese
  • 1/4 cup sour cream
  • 1/4 cup guacamole
  • 1/4 cup pico de gallo


Instructions

  1. Prepare your rice according to package directions.
  2. In a medium bowl, combine the shredded chicken with olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Toss to coat evenly.
  3. Warm the seasoned chicken in a skillet over medium heat for 3-5 minutes, or until heated through.
  4. Add the rinsed and drained black beans and pinto beans to the skillet with the chicken. Stir and cook for another 2-3 minutes until the beans are warm.
  5. Assemble your burrito bowls: Start with a base of cooked rice.
