Instructions
- In a medium bowl, whisk together the coconut flour, baking powder, and salt.
- In a separate bowl, whisk the eggs, almond milk, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients. Whisk until just combined. The batter will be thick. Let the batter rest for 5 minutes; this allows the coconut flour to absorb the liquid, which helps create a fluffier pancake.
- Stir in the melted coconut oil or butter and any optional sweetener.
- Heat a non-stick griddle or large skillet over medium heat. Lightly grease the surface with coconut oil or butter.
- Drop batter by 1/4 cup measures onto the hot griddle. You may need to gently spread the batter slightly with the back of a spoon, as it will not spread on its own like traditional batter.
