  • 2 cups strong brewed coffee, cooled
  • 1/4 cup coffee liqueur (optional)
  • 6 large egg yolks
  • 3/4 cup granulated sugar
  • 1 pound mascarpone cheese, softened
  • 1 1/2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 24-30 ladyfingers
  • Unsweetened cocoa powder, for dusting


Instructions

  1. Combine the cooled coffee and coffee liqueur (if using) in a shallow dish.
  2. In a heatproof bowl set over simmering water, whisk together the egg yolks and granulated sugar. Cook, whisking constantly, until thickened and pale, about 5-7 minutes. Remove from heat and let cool slightly.
  3. Gently fold the softened mascarpone cheese into the egg yolk mixture until just combined.
  4. In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form.
  5. Fold the whipped cream into the mascarpone mixture until smooth and creamy.
  6. Quickly dip each ladyfinger into the coffee mixture, ensuring they are moist but not soggy. Arrange a single layer of dipped ladyfingers in the bottom of an 8×8 inch baking dish.
  7. Spread half of the mascarpone cream mixture evenly over the ladyfingers.
  8. Repeat with another layer of dipped ladyfingers and the remaining mascarpone cream.
  9. Cover the dish and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the tiramisu to set.
  10. Before serving, dust the top generously with unsweetened cocoa powder.

Notes

  • For a richer flavor, use espresso instead of brewed coffee.
  • Ensure your mascarpone cheese is at room temperature for easier mixing.
  • Do not oversoak the ladyfingers, or they will become mushy.
  • For a non-alcoholic version, omit the coffee liqueur and use only strong brewed coffee.
