A simple recipe for moist, comforting bread pudding made with stale bread and topped with a creamy vanilla sauce.

- 8 cups stale bread, cubed
- 4 large eggs
- 1 cup granulated sugar
- 2 cups whole milk
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg

- 1/4 cup (1/2 stick) unsalted butter, melted (for sauce)

- 2 tablespoons all-purpose flour (for sauce)
- 1 1/2 cups whole milk (for sauce)
- 1 teaspoon vanilla extract (for sauce)
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Lightly grease an 8×8 inch baking dish.
- Place the cubed stale bread into the prepared baking dish. Sprinkle raisins over the bread, if using.
- In a large bowl, whisk together the 4 eggs, 1 cup sugar, 2 cups milk, 1 teaspoon vanilla, cinnamon, and nutmeg until well combined.
- Pour the custard mixture evenly over the bread cubes. Gently press the bread down to make sure it soaks up the liquid. Let it sit for 15 minutes.
- Bake for 45 to 55 minutes, or until the top is golden brown and a knife inserted near the center comes out mostly clean.
- While the pudding bakes, prepare the vanilla sauce. In a medium saucepan, melt the butter over medium heat.
- Whisk in the 2 tablespoons of flour and cook for one minute, stirring constantly.
- Gradually whisk in the 1 1/2 cups of milk until smooth.
- Stir in the 1/2 cup sugar and cook, stirring often, until the sauce thickens enough to coat the back of a spoon, about 5 to 7 minutes. Do not let it boil rapidly.
- Remove the sauce from the heat and stir in the remaining 1 teaspoon of vanilla extract.
- Serve the warm bread pudding drizzled generously with the vanilla sauce.
Notes
- Use bread that is slightly stale, like French bread or challah, for the best texture.
- If your bread is very dry, you may need to let it soak for 30 minutes instead of 15.
- You can substitute brown sugar for white sugar in the custard for a deeper flavor.
