  • 6 cups thinly sliced peeled apples (about 6 medium apples)
  • 3/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter, cut into small pieces
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon milk (for egg wash)


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare your double pie crust according to your favorite recipe or package directions.
  3. In a large bowl, combine the sliced apples, granulated sugar, flour, cinnamon, nutmeg, and salt. Toss gently to coat the apples evenly.
  4. Pour the apple mixture into the bottom pie crust, spreading it out evenly.
  5. Dot the top of the apple filling with the small pieces of butter.
  6. Place the top pie crust over the filling. Crimp the edges of the top and bottom crusts together to seal. Cut several vents in the top crust with a sharp knife.
  7. In a small bowl, whisk together the beaten egg and milk to create an egg wash. Brush this mixture evenly over the top crust.
  8. Place the pie on a baking sheet to catch any drips.
  9. Bake for 15 minutes at 425°F (220°C).
  10. Reduce the oven temperature to 375°F (190°C) and continue baking for another 35-45 minutes, or until the crust is golden brown and the filling is bubbly.
  11. If the crust starts to brown too quickly, you can loosely tent the pie with aluminum foil.
  12. Let the pie cool on a wire rack for at least 2-3 hours before slicing and serving. This allows the filling to set properly.
