Citrus Rhubarb Mocktail with Apple Juice

Description

A refreshing, non-alcoholic cooler combining tart rhubarb, bright citrus, and sweet apple juice.


Ingredients

  • 1 cup chopped fresh rhubarb
  • 1/2 cup water
  • 1/2 cup granulated sugar
  • 1 cup unsweetened apple juice
  • 1/4 cup fresh lemon juice
  • 2 tablespoons fresh lime juice
  • Chilled sparkling water or club soda
  • Ice cubes
  • Citrus slices for garnish


Instructions

  1. Make the rhubarb syrup: Combine chopped rhubarb, water, and sugar in a small saucepan. Bring to a simmer over medium heat. Cook for 10 to 12 minutes, stirring occasionally, until the rhubarb is very soft and broken down.
  2. Strain the syrup: Pour the mixture through a fine-mesh sieve into a bowl, pressing gently on the solids to extract the liquid. Discard the solids. Let the syrup cool completely.
  3. Combine base ingredients: In a pitcher, mix the cooled rhubarb syrup, apple juice, lemon juice, and lime juice. Stir well.
  4. Assemble the drink: Fill glasses with ice. Pour the rhubarb-citrus mixture into each glass, filling about halfway to two-thirds full.
  5. Top with chilled sparkling water or club soda to fill the glass. Stir gently.
  6. Garnish each glass with a citrus slice before serving.

Notes

  • If you prefer a less sweet drink, reduce the sugar in the syrup to 1/3 cup.
  • For an extra layer of flavor, add a thin slice of fresh ginger to the rhubarb while it simmers for the syrup.
  • You can prepare the rhubarb syrup up to one week ahead and store it in the refrigerator.
