Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a large bowl, beat the eggs and granulated sugar until well combined.
  4. Add the vegetable oil, applesauce, and vanilla extract to the egg mixture and mix until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Gently fold in the grated zucchini.
  7. In a separate small bowl, prepare the streusel topping by combining the flour, brown sugar, and cinnamon. Cut in the cold butter with a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  8. Pour the zucchini bread batter into the prepared loaf pan. Sprinkle the streusel topping evenly over the batter.
  9. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
