  2. Wash and dry the apples thoroughly.
  3. Core the apples, then slice them as thinly as possible, about 1/16 inch thick. A mandoline is helpful for achieving uniform slices.
  4. In a small bowl, mix together the cinnamon and nutmeg (if using). If you prefer sweeter chips, mix the sugar with the cinnamon and nutmeg.
  5. Arrange the apple slices in a single layer on baking sheets lined with parchment paper. Do not overlap them.
  6. Sprinkle the cinnamon mixture evenly over both sides of the apple slices.
  7. Bake for 2-3 hours, or until the apple chips are dry and crisp. The exact time will depend on your oven and the thickness of your slices.
  8. Flip the apple slices halfway through baking to ensure even drying.
  9. Once baked, turn off the oven and let the apple chips cool completely in the oven with the door slightly ajar. This helps them crisp up further.
