Instructions
- Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and 1/2 cup granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then mix in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, salt, and 1 teaspoon of cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
- In a small bowl, combine the 1/2 cup granulated sugar and 2 tablespoons of cinnamon for the coating.
- Scoop the dough into balls, about 2 tablespoons each. Roll each dough ball completely in the cinnamon-sugar mixture until fully coated.
- Place the coated dough balls onto the prepared baking sheets, leaving about 2 inches between them.
- Bake for 10 to 12 minutes, or until the edges are set but the centers still look slightly soft.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For an extra gooey center, slightly underbake the cookies by 1 minute.
- If you want a bakery-style look, gently press the tops of the cookies down slightly after rolling them in the sugar mixture before baking.
- For white chocolate chip churro cookies, fold in 1 cup of white chocolate chips after mixing the dough.
