  • 1 and 1/2 cups grated zucchini (about 1 medium zucchini)
  • 1 cup plant-based milk
  • 1 tablespoon apple cider vinegar
  • 1/2 cup vegan chocolate chips (optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together the gluten-free flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate medium bowl, mash the avocado until smooth. Stir in the sugar, vegetable oil, and vanilla extract.
  4. Add the grated zucchini to the wet ingredients and mix well.
  5. In a small bowl, combine the plant-based milk and apple cider vinegar. Let it sit for a few minutes until it curdles.
  6. Pour the milk mixture into the wet ingredients and stir to combine.
  7. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  8. If using, fold in the vegan chocolate chips.
  9. Pour the batter into the prepared cake pan and spread evenly.
  10. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  11. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  12. Once cooled, you can dust with powdered sugar or frost with your favorite vegan frosting.
