Ingredients

  • 1/4 cup fresh raspberry puree (strained to remove seeds)
  • Pinch of salt
  • Cocoa powder, for dusting
  • Optional: Freeze-dried raspberries, crushed, for coating


Instructions

  1. Place the chopped chocolate in a medium, heatproof bowl.
  2. Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer around the edges. Do not boil.
  3. Pour the hot cream over the chopped chocolate. Let it sit undisturbed for five minutes to allow the chocolate to melt gently.
  4. Add the butter, vanilla extract, raspberry puree, and salt to the chocolate mixture.
  5. Whisk slowly, starting from the center and gradually working outwards, until the ganache is smooth and completely combined.
  6. Cover the bowl and refrigerate the ganache for at least 3 hours, or until firm enough to scoop.
  7. Line a baking sheet with parchment paper.
  8. Use a small spoon or a melon baller to scoop small portions of the chilled ganache. Quickly roll each portion between your palms to form a smooth ball. Work fast so the ganache does not melt.
  9. Roll the finished truffles in cocoa powder or crushed freeze-dried raspberries for a finished coat.
  10. Store the truffles in an airtight container in the refrigerator until ready to serve. Allow them to sit at room temperature for 10 minutes before eating for the best texture.
