- 1 cup almond flour
- 1/2 cup unsweetened cocoa powder
- 1 scoop chocolate protein powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsweetened applesauce
- 1/4 cup maple syrup
- 1/4 cup melted coconut oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened almond milk
- 1/4 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it well.
- In a large bowl, whisk together the almond flour, cocoa powder, protein powder, baking soda, and salt.
- In a separate bowl, combine the applesauce, maple syrup, melted coconut oil, eggs, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Stir in the almond milk until the batter is smooth.
- If using, fold in the chocolate chips.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For a richer chocolate flavor, you can add a tablespoon of instant coffee to the dry ingredients.
- Adjust the maple syrup to your sweetness preference.
- Ensure your protein powder is unsweetened or adjust sweetener accordingly.
