- 2 large eggs
- 1/2 cup unsweetened applesauce
- 1/4 cup maple syrup (or preferred sweetener)
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
- In a large bowl, whisk together the almond flour, cocoa powder, protein powder, baking soda, and salt.
- In a separate medium bowl, whisk the eggs, applesauce, maple syrup, melted coconut oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix.
- Fold in the chocolate chips, if using.
- Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
