Description

Create beautiful and decadent Chocolate Mousse Parfaits, the perfect make-ahead dessert for Valentine’s Day. These layered treats capture the rich taste of chocolate, offering an elegant finish to your celebration.


Ingredients

  • 1 cup heavy cream
  • 4 ounces bittersweet chocolate, chopped
  • 2 large egg yolks
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • For layering/garnish: Fresh raspberries, chocolate shavings, whipped cream


Instructions

  1. Gently heat half of the heavy cream in a small saucepan until simmering. Remove from heat.
  2. Place the chopped chocolate in a heatproof bowl. Pour the hot cream over the chocolate and let it sit for 2 minutes. Whisk until smooth. Set aside to cool slightly.
  3. In a separate bowl, whisk the egg yolks and sugar until pale and slightly thickened.
  4. Temper the egg yolks by slowly whisking in a few tablespoons of the warm chocolate mixture. Then, whisk the tempered yolks back into the main chocolate mixture. Stir in the vanilla extract and salt. Let this mixture cool completely to room temperature.
  5. In a chilled bowl, whip the remaining half cup of heavy cream until soft peaks form.
  6. Gently fold the whipped cream into the cooled chocolate mixture in two additions until just combined. Do not overmix.
  7. To assemble the parfaits, layer the chocolate mousse with fresh raspberries and chocolate shavings in individual glasses or small jars.
  8. Chill the parfaits for at least 4 hours, or preferably overnight, to set completely.
  9. Before serving, top with a dollop of whipped cream and extra chocolate shavings or a fresh raspberry.

Notes

  • Use high-quality bittersweet chocolate for the best flavor.
  • Make sure the chocolate mixture is completely cool before folding in the whipped cream to keep the mousse light.
  • These parfaits store well in the refrigerator for up to two days.
  • For a richer flavor, add a splash of coffee liqueur to the chocolate mixture.
