A refreshing and flavorful Chilled Asian Sesame Noodle Salad with a creamy peanut dressing.

- 16 oz linguine or other pasta
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 2 tbsp sesame oil
- 1 tbsp honey or maple syrup
- 1 clove garlic, minced
- 1/2 tsp grated fresh ginger
- 1/4 cup water
- 2 cups shredded carrots
- 1 red bell pepper, thinly sliced
- 1 cup chopped cucumber
- 1/2 cup chopped green onions
- 1/4 cup chopped cilantro
- Sesame seeds for garnish (optional)
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water.
- In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, honey, garlic, ginger, and water until smooth.
- In a large bowl, combine cooked pasta, shredded carrots, red bell pepper, cucumber, green onions, and cilantro.
- Pour the peanut dressing over the pasta and vegetables. Toss to coat evenly.
- Cover and chill in the refrigerator for at least 30 minutes before serving.
- Garnish with sesame seeds if desired.
Notes
- You can adjust the amount of water in the dressing to reach your desired consistency.
- Feel free to add other vegetables like edamame, snap peas, or cabbage.
- For a spicier dressing, add a pinch of red pepper flakes or a dash of Sriracha.
