Description

A refreshing and flavorful Chilled Asian Sesame Noodle Salad with a creamy peanut dressing.


Ingredients

  • 16 oz linguine or other pasta
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp sesame oil
  • 1 tbsp honey or maple syrup
  • 1 clove garlic, minced
  • 1/2 tsp grated fresh ginger
  • 1/4 cup water
  • 2 cups shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1 cup chopped cucumber
  • 1/2 cup chopped green onions
  • 1/4 cup chopped cilantro
  • Sesame seeds for garnish (optional)


Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, honey, garlic, ginger, and water until smooth.
  3. In a large bowl, combine cooked pasta, shredded carrots, red bell pepper, cucumber, green onions, and cilantro.
  4. Pour the peanut dressing over the pasta and vegetables. Toss to coat evenly.
  5. Cover and chill in the refrigerator for at least 30 minutes before serving.
  6. Garnish with sesame seeds if desired.

Notes

  • You can adjust the amount of water in the dressing to reach your desired consistency.
  • Feel free to add other vegetables like edamame, snap peas, or cabbage.
  • For a spicier dressing, add a pinch of red pepper flakes or a dash of Sriracha.
