- 1/2 teaspoon red pepper flakes (or more, to taste)
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro (optional)
Instructions
- Cook udon noodles according to package directions. Drain and set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add minced garlic, grated ginger, and red pepper flakes. Stir-fry for about 30 seconds until fragrant.
- In a small bowl, whisk together soy sauce, oyster sauce, rice vinegar, and sesame oil.
- Add the cooked udon noodles to the skillet.
- Pour the sauce over the noodles.
- Toss everything together until the noodles are well coated.
- Stir-fry for 2-3 minutes, until heated through.
- Garnish with chopped green onions and cilantro, if desired.

- For extra spice, add more red pepper flakes or a dash of sriracha.
- Feel free to add your favorite vegetables like bell peppers, broccoli, or snap peas.
