Description

Make fast and flavorful Indo-Chinese style chili chicken wraps perfect for your midday meal.


Ingredients

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1/2 cup chili garlic sauce (adjust to heat preference)
  • 2 tablespoons ketchup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1/4 cup water
  • 4 large flour tortillas
  • 1 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 2 tablespoons mayonnaise
  • 1 teaspoon lime juice
  • Pinch of salt


Instructions

  1. Toss the chicken pieces with soy sauce and cornstarch in a bowl. Set aside for 10 minutes.
  2. Heat the vegetable oil in a skillet or wok over medium-high heat. Add the garlic and ginger; cook for 30 seconds until fragrant.
  3. Add the coated chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.
  4. In a small bowl, whisk together the chili garlic sauce, ketchup, rice vinegar, sugar, and water.
  5. Pour the sauce mixture over the chicken. Stir constantly until the sauce thickens and coats the chicken well, about 2 minutes. Remove from heat.
  6. In a separate bowl, combine the shredded cabbage, carrots, mayonnaise, lime juice, and salt to make the slaw. Mix well.
  7. Warm the flour tortillas according to package directions.
  8. To assemble, place a portion of the chili chicken down the center of each tortilla. Top with a spoonful of the crunchy slaw.
  9. Fold the sides of the tortilla inward, then roll tightly from the bottom to create your wrap. Serve immediately.

Notes

  • You can cook the chili chicken ahead of time and store it in the refrigerator for up to 3 days. Reheat before assembling the wraps.
  • For extra crunch, add a few chopped green onions to the chicken mixture just before serving.
  • Use whole wheat tortillas for a slightly healthier option.
